From “Vegetarian Cookbook: Satisfying, Bold, and Flavorful Recipes from the Garden”. Hearty and full flavored, the spiced-up mixture of oats and beans is satisfying and soulful. Makes a great sandwich on a kaiser roll with sautéed onions and spicy ketchup.
1/8 of the loaf
2 teaspoons olive oil
1 cup diced onion
1 cup diced celery
1/2 cup diced green pepper
1/2 cup diced red pepper
1 jalapeño, minced
2 cloves garlic, minced
1 teaspoon cumin, ground
2 cups kidney or pinto beans, drained well and mashed slightly with fork
1 pound cooked, coarsely mashed potatoes, peeled
1 cup rolled oats (not instant)
1/3 cup bottled low-sugar barbeque sauce
1 tablespoon Dijon-style mustard
1 teaspoon salt
1/4 cup cilantro, minced
1 cup low-fat cheddar or Jack cheese (Optional)(You may use preblended Mexican cheese blend as well.)
1. Heat oil in a nonstick sauté pan over medium heat. Sauté onion, celery, green and red peppers, jalapeño, garlic, and cumin for 3 minutes.
2. Add mashed beans, cooked potatoes, and all remaining ingredients.
3. Place in a loaf pan and score the surface with a knife. Bake in a 375ºF oven for 30 minutes until browned on top and heated through. If desired, glaze surface of loaf with 1/4 cup of additional barbeque sauce 10 minutes before end of cooking process.
