Four Creative Ways to Enjoy Sardines – No Crackers Needed!

SardinesThere are so many reasons to love sardines — they’re packed with nutrition, especially Omega-3 fatty acids, vitamin D, vitamin B12, and calcium. But have you often felt like you need to know HOW to love ‘em? So many people tell us that they would like to give sardines a try (or another try) but have no idea what to do with them other than eating them with crackers. Pairing sardines with fresh and interesting flavors can breathe a whole new life into these tiny little silver fish.

Spicy sardine lettuce wraps: Start with sardines packed in oil. Chop and mix with avocado, lemon juice, garlic and hot sauce (preferably Sriracha hot sauce which has less vinegar and can be found at most major supermarkets.) Wrap in romaine lettuce leaves or serve over a bed of greens.

Sardine pizza: Chop sardines and sauté with chopped onions for about 5 minutes. Stir sardines and onions into pizza sauce. Top a whole wheat pizza crust with the sauce, plus additional veggies such as mushrooms, arugula or spinach, and part-skim shredded mozzarella, or a combination of mozzarella and part-skim ricotta, and parmesan. Bake at 425 until pizza is cooked.

Baked eggs with sardines: Sauté chopped sardines with onions, crushed garlic, and chopped parsley for about 5 minutes. Place the sardine mixture in an oven-proof serving dish and then crack a few eggs over the sardines (use one egg per serving that you’re making). Bake at 350 degrees for approximately 7-10 minutes or until the egg whites are firm. Top with parmesan cheese and hot sauce.

Kale salad: Chop kale into small pieces, rub with olive oil, and toss with sardines (chopped or whole depending on your preference), halved grape tomatoes, red onion, and olives. Dress with a lemon dressing, made from equal parts lemon juice and olive oil, a dab of chopped garlic, and touch of honey.
