Watermelon and Arugula Salad with Toasted Sunflower Seeds

Fight fat and get healthy skin with this watermelon and arugula salad

This refreshing sweet and tangy salad combo is perfect for a summer barbecue, picnic in the park, or potluck gathering.  Watermelon is packed with the skin-protecting antioxidant vitamin C, while our healthy vinaigrette dressing with a hint of mint gives the salad flavor and even more health benefits.  Did you know that including vinegar with your meal can reduce the glycemic index (a measure of how high your blood sugar rises after a meal) of your whole meal?  Lower glycemic index meals may also help with controlling your weight and the prevention of diabetes.

This salad is super easy to make and oh so tasty. Try it before summer is over!

Watermelon and arugula salad

Watermelon and Arugula Salad with Toasted Sunflower Seeds
Serves 6

Ingredients:
6 cups arugula, washed and dried
4 cups seedless watermelon, cut in 1-inch cubes
8 ounces crumbled feta cheese (approximately 2 cups)
1/2 cup toasted unsalted sunflower seeds

For dressing:
1/3 cup olive oil
1/4 cup lemon juice
1/4 cup orange juice
1/4 cup minced shallot
1/4 cup mint, finely chopped
1/2 teaspoon salt
1/2 teaspoon black pepper, or more to taste

Directions:
Place arugula, watermelon, feta cheese, and sunflower seeds in a large bowl. In a smaller bowl, whisk together ingredients listed above from lemon juice through black pepper. Slowly add the olive oil while whisking constantly. Pour dressing over the watermelon mixture and toss gently to coat. Refrigerate covered or serve immediately.
