If you find yourself making the same old fish recipes year after year for Lent, let 2017 be the year of getting creative in the kitchen for Good Friday dinner. We’ve rounded up six recipes that are flavorful, fast, and easy for serving to larger groups.
Maple, Mustard, and Rosemary Salmon: This was one of the first recipes we ever posted on our original website. It’s been a longstanding favorite because it’s incredibly easy, the ingredients are usually on hand, and it’s always a crowd-pleaser. Serve it with sweet potato fries and roasted veggies for a complete dinner.
Grilled Shrimp Skewers over White Bean Salad: The recipes from Eating Well never disappoint because they’re loaded with flavor. These grilled shrimp skewers are served over a bed of marinated white beans, which tastes and sounds fancy, but is actually simple to make.
Indian Fish Coconut Curry: Curries are some of our favorite dishes, especially when it comes to family meals. They’re hearty and comforting and SO flavorful. This curry, from Jaden at Steamy Kitchen, can be served over brown rice or quinoa…or any whole grain you love.
Alaska Cod in Miso Broth with Udon Noodles: Frozen seafood doesn’t need to be thawed before cooking and we love that this recipe from the Alaska Seafood website is so straightforward. The miso broth is surprisingly simple too, but the end result is one that will definitely impress everyone at the dinner table. Serve with a big green salad to round out the meal.
Whole Wheat Linguini with Spicy Sun-Dried Tomatoes, Tuna, and Arugula We’re big fans of the Prime Fillet® Gourmet Flavors Albacore Tuna because it’s packed with flavor from whole ingredients and makes putting together a really delicious meal that much easier. This particular recipe is rich with a wide variety of flavors and textures. It doesn’t look or taste like it takes less than 15 minutes to whip up (it does!)
Grilled Coconut Lime Tilapia Tacos with Kiwi Salsa These tacos, from Jessica Merchant’s website How Sweet it is combine tropical flavors and are a perfect answer to your taste buds’ need to celebrate spring weather. They’re also great to serve family-style, with a platter of fish, tortillas, shredded veggies, and a bowl of salsa, so everyone can build their own tacos.
